We sat down with Chris to ask him a few questions and learn more about his approach.

  1. What’s a trait you look for in all your team hires?

Positive attitude is by far the most important thing for me. I can teach the rest.

  2. What’s one thing that is inspiring you in the culinary industry right now?

Just all of the amazing new concepts that are popping up locally and nationwide. It is really inspiring, especially after the two years we just endured, to see how people have bounced back, culinarily and otherwise.

  3. What’s been a surprising go-to ingredient lately?

Not sure I have one currently. I am really excited about all of the amazing late fall/early winter produce that I have been able to get my hands on from the local farmers markets ie arugula, kale, swiss chard, late sweet and hot peppers.

  4. Do you have a memorable hiring experience from when you were looking for a job?

I was given an opportunity by Chef Karen Hoffman as a line cook in San Francisco. That will always be my favorite job. She took me under her wing while I was in culinary school and taught me so much. She was the first ever female executive chef for the four seasons restaurant group and then went on to be the Kitchen Manager at the famed Jardiniere in San Francisco. She is one of my biggest mentors by far. I owe her more than she knows.
